I'm going away for two months to the country to a little town that doesn't even have a gym. What exercises can I do that will still burn fat, but maintain muscle? I can't really go running, because I get shin splints. Any suggestions? I'm looking for HIIT workouts.

HIIT is most naturally done with running (sprinting), so if that's not an option and you don't have any equipment then doing HIIT might be difficult. I would consider doing bodyweight resistance exercises like http://www.mikesfitness.com/article_weightnoequip.php . You can do them as often as daily if you are at a good fitness level and by making between-set rest period short (30-60 seconds) their effect will be HIIT-like.
